Some of My Favorite Healthy, Low Carb Go-To Meals, Snacks, Etc.

I try to maintain a healthy, low-carb diet most of the time.  In terms of carbs, I avoid breads, pastas, and other wheat-based foods as much as possible (I will indulge on special occasions).  My diet consists of lots of vegetables and lean proteins (chicken, eggs, turkey, and fish), some dairy and nuts, and small amounts of non-wheat carbs (such as corn, potatoes, and quinoa).  For me, this is a diet I can maintain and doesn’t leave me feeling starving.

Some of my go-to’s include salads, home made vegetable soup, grilled chicken or salmon, broccoli and asparagus.  Instead of bread, I often use either lettuce (wraps) or red bell peppers.  I also like to use cauliflower or zucchini as replacements (i.e., zucchini instead of pasta) for other dishes.  My go-to spices include turmeric, ginger, garlic powder, and black pepper.

After a few carb-crazy days with my big Italian family over this past weekend, I’m hitting my low-carb diet hard this week.  Here are a few of my favorite, easy low carb staples (I’ll post more ideas, favorites, and recipes in future posts):

Breakfast

 Smoothies

Blueberry, Strawberry, Banana Smoothie

Blend the following:

A handful (or about ½ cup) of blueberries

About four strawberries

½ banana

½ cup Greek yogurt

½ cup crushed ice

½ cup of milk or soymilk

Coffee Smoothie

Blend together:

About a cup of cooled off brewed coffee

A cup of crushed ice

Optional Packet of Struvia (or amount of sugar or other sweetener you like)

About a half cup of coconut mild

Lunch/Dinner
