Anything pasta can do, zucchini can do better! That is, when you’re eating healthy, increasing vegetables, and reducing carbs.
Whenever I feel like having spaghetti, or my family is having spaghetti, I make my own zucchini noodles. It’s so easy to do, and to me, is tastes just as good as the real thing.
I make my “noodles” with the cheese grater. You can also get a special tool to do the trick. My mom recently got the Veggetti Spiral Vegetable Cutter (you can get it at Bed, Bath & Beyond: http://bit.ly/1Dr7TAb), which makes the zucchini even more rounded, like spaghetti noodles.
The way I do it: after washing the zucchini and cutting off the ends, I lay the grater tower down on its side, and slide the zucchini over it lengthwise (to get long strips).
Toppings for zucchini noodles:
Traditional Meat (ground turkey) sauce or tomato sauce (pictured at the top of this page) – just brown the ground beef or turkey and add your favorite tomato sauce.
Olive oil, Parmesan cheese, pine nuts and black olives
Shrimp Scampi – shrimp sauteed in olive oil and butter, with garlic, parsley and black pepper
Other suggestions: pesto sauce; Alfredo sauce; carbonara (some pancetta or bacon, grated Pecorino Romano or Parmesan cheese, pepper, parsley and garlic); any other topping or ingredients that are served on/in pasta.
